          Easy to eat and easy to use, the pizza is very popular around the world. But what are the exact origins of this dish, and how to prepare it to perfection? Editus.lu tells you everything, and even gives you the recipe for Pizza Bufalina! 

          The origins of pizza

          The appearance of pizza is not new since it has existed since the Middle Ages. Nevertheless, at the time, it was a kind of pancake coated with fat of lard or oil, and cooked in a wood oven.

          The pizza as we know it today dates back to the 16th century, coinciding with the emergence of tomato in Europe. It is in the Italian city of Naples that it finds its origins.

          It was during the 20th century that the pizza will start to spread around the world: Today, from the United States to Japan, via Luxembourg, it is a great success and pleases both young and old alike.

          La Margherita, the most famous pizza

          In 1889, while traveling in her kingdom, Queen Margaret of Savoy discovers that many Italians eat pizza. She asks to taste this dish become popular, and is immediately seduced. Back in her palace, she asks the pizzaiolo Raffaele Esposito to prepare several variants of this dish which she loves, with a special preference for the "Pomodoro e Mozzarella". Chef Esposito will name it "Margherita", whose colors refer to the Italian flag (basil green, mozzarella white and tomato red). Nowadays, it is the most popular pizza in the world.

          No pizza without a good dough            

          On the dough side, two schools mix: some have a preference for real Italian pizza, which is a thin , crispy dough , while others prefer American pizza, which has a thicker dough and is closer to a bread dough .

          If ready-to-use pizza dough is easily found in a department store, it's better to make it yourself, it will be much better. For that, nothing very complicated: the dough of an excellent homemade pizza consists of water, flour, yeast, olive oil, salt and a pinch of sugar.

          A trim that can be declined to infinity

          If mozzarella and tomato are the two basic ingredients of the majority of pizzas, other ingredients can come into its composition: ham, anchovies, mushrooms, olives, capers, peppers, artichokes, pineapple, salami, a multitude of other cheeses, etc.

          Nowadays, we also eat sweet pizzas made of fruit, chocolate, or even peanut butter. 

          The recipe of Pizza Bufalina

          For pizza dough

          • 200 gr. of flour
          • 8 gr. fresh yeast
          • 100 ml. warm water
          • 1 tablespoon of olive oil
          • 1 teaspoon of salt
          • 1 pinch of sugar

          For garnish ?

          • 200   gr. tomato coulis
          • 1 ball of mozzarella di Bufala
          • A dozen cherry tomatoes
          • Some leaves of rockets
          • Some basil leaves
          • A drizzle of olive oil
          • Pepper and salt

          In a salad bowl, put the flour, yeast dissolved in warm water, olive oil, salt and sugar.

          Knead the dough slowly until a homogeneous ball is obtained. 

          Place the dough in a container and cover with a cloth. Wait 40 to 60 minutes, the dough should double in volume. 

          The leavened dough, flour your work plan. 

          Roll out the dough with a roller to make a circle. Place the circle on parchment paper. 

          Spread the tomato sauce over the dough. Add the mozzarella cut into pieces. Season with salt and pepper, and add a drizzle of olive oil. 

          Put the pizza in the oven (200 °) for 6 minutes.

          At the end of cooking, add the arugula and basil on the pizza.
