Make perfect our delicious traditional pancake with frangipane, crisp and golden, to proudly present to your guests this Sunday, January 6 to celebrate the Epiphany! Who will win the crown?

Preheat the oven to 200 ° C (item 6).
Unroll the first puff pastry in the bottom of a tart pan and prick it with a fork.
In a bowl, beat the sugar and soft butter , then add the almond powder , the seeds of the vanilla bean and the rum.
Divide the almond cream into the pan, making sure to leave a thin border of dough and place the bean in it .
Cover with the second disc of puff pastry, solder the edges with a little water and brush the lid with egg yolk.
Draw the patterns (diagonals, ears ...) with the blade of a sharp knife, then place 30 minutes cool.
Put in the oven for 20 minutes, checking the cooking regularly.
Variation: bet on originality by incorporating red fruits or pieces of apples, or spreading the base of melted chocolate or speculoos paste.
