Sift the flour and pour it into a large bowl forming a well.

Gradually add the milk while continuing to whisk vigorously to avoid lumps.
Once the dough is smooth, add the butter . Add milk if it seems too thick.
Cover the dough and let it rest for 30 minutes at room temperature.
Once this time has elapsed, oil or butter the pan with a paper towel, a gesture to reproduce every 3 pancakes.
Pour a ladle of dough into the pan. Cook on low heat for 1 to 2 minutes on each side, so that the pancake takes a nice color. Repeat the process until the dough is gone.
